Our much loved Soft Cheese Course will teach you how to make a variety of fantastic cheeses. You will make Camembert or Brie, Feta, Ricotta, Quark, Mascarpone and Greek style yoghurt and Labneh. Gain an in-depth understanding of:

The importance of milk selection Cultures, rennet and enzymes.
The facts about Brine and Affinage – how best to mature cheese.
The health benefits and many uses of whey
